Irish Potato and Leek Soup

The beautiful biking trails through the Ring of Kerry, the magnificent stones of The Giants Causeway, the dropping Cliffs of Moher… Who wouldn’t want to visit Ireland at least for an evening?
- 2 Tbsp olive oil
- 3 leeks, sliced thin
- 2 potatoes, finely cubed
- 5 cups chicken stock
- 1 cup half-and-half
- salt and pepper
- Heat the oil in a large pot over medium heat. Add the leeks and cook until soft, about 5 minutes.
- Add the potato cubes and chicken stock, cover and let simmer until potatoes are soft, about 10 minutes. Add the half-in-half.
- Pour soup into blender and blend until the soup has an even consistency.
- Add salt and pepper to taste. Top with fresh parsley.
