Mexican Mole Poblano

Ingredients
  • 2 dried chilies
  • 1 tsp cumin
  • 2″ piece cinnamon
  • 4 cloves
  • 2 Tbsp oil
  • 1 lb chicken breasts
  • 4 cloves garlic
  • 1-8-ounce can tomato sauce
  • 1 cup chicken broth
  • 1/3 cup semisweet chocolate chips
  • 2 Tbsp peanut butter
  • salt and pepper to taste
Instructions
  1. Dry roast the spices in a pan over medium heat until fragrant, about 3 minutes. Continuously move the pan. Remove from the heat and blend to a powder.
  2. Heat 1 Tbsp oil in large pan and cook chicken until lightly brown on each side. Set chicken aside.
  3. Over medium heat 2 Tbsp oil and add garlic and spice blend in pan.
  4. Return the chicken to the pan and let simmer for 10 minutes, or until chicken is thoroughly cooked. Add salt and pepper to taste.
  5. Serve with rice and beans.
