Indian Vegetable Korma

Ingredients
- 2 Tbsp Garam Masala spice blend
- 1 Tbsp Turmeric
- 1 tsp Cayenne
- 2 Tbsp oil
- 1″ piece ginger, minced
- 4 cloves garlic, minced
- 1 onion, finely diced
- 2 potatoes
- 1 head cauliflower or broccoli (or mixture)
- 1 carrot
- 1 red bell pepper
- 1/2 cup cashews
- 1 can coconut milk
- 1/4 cup cilantro, chopped
- salt and pepper to taste.
Instructions
- Heat oil in a large pan over medium heat.
- Add the ginger, garlic, onion, Garam Masala, Turmeric, and Cayenne and stir until fragrant, about 5 minutes.
- Add the potatoes and cook for 5 minutes, stirring occasionally.
- Blend the cashews and 1/2 cup water together.
- Add the cashew mixture, coconut milk, cauliflower, broccoli, carrot, and red bell pepper to the mixture. Let simmer for 10 minutes, or until potatoes are soft.
- Top with cilantro. Add salt and pepper to taste.
