Ingredients
- Berbere Spice Blend:
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp coriander seeds
- 1 tsp fenugreek seeds
- 1 dried chili
- Main Dish:
- 3 Tbsp olive oil
- 4 garlic cloves, finely diced
- 1 large onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 4 medium tomatoes, diced
- 1/2 cup water
- 4 eggs
- 1/4 cup feta
- salt and pepper to taste
Instructions
- Roast spices for 5 minutes over low heat and blend together to create Berbere spice blend.
- Add oil to hot pan and saute garlic and onions until translucent.
- Add the red pepper and yellow pepper and cook for 3-4 minutes.
- Add tomatoes and water. Let simmer for 5 minutes.
- Crack the eggs over the mixture and cover for 5 minutes.
- Top with feta. Add salt and pepper to taste.
